Marilyn's Seven Minute Icing

This icing was used on her infamous doll cakes. I'm so mad that I did not take more pictures of her doll cakes!!  

Brianne's Birthday 2003:


Place ingredients on top section of double boiler and beat thoroughly until blended:

2 unbeaten egg whites
1 ½ cup sugar
5 Tbsp cold water
¼ tsp cream of tartar
1 ½ tsp light corn syrup

Place these ingredients over rapidly boiling water. Beat constantly with a rotary beater or wire whisk for 7 minutes.

Remove from stove.

Add: 1 tsp vanilla

Continue beating until icing is the right consistency to spread. I beat it for about another seven minutes.  Frosts 2 9-inch layers.

Marilyn's Baked Beans

1 lb. small white beans

Soak beans overnight in cold water. Check for rocks in beans & add:

1 #2 can (28 oz.) Tomatoes
1 can tomato sauce
½ lb. brown sugar
1 chopped onion
1 ham hock

Bring to boil on stove, cover & put in 325 oven, stir every hour. (May need to add water near end). Bake 8 hours.
