Beef and Bean Enchiladas
I found this in Marilyn's recipe box. Recipe is well-worn and Jim remembers her making this when he was growing up.
I tried it and they were really good! The whole family loved them.
It's been two years today since she left us to live with Heavenly Father. We all miss the love she showed us and her fun spirit so much!

Shish Kabob Marinade

½ cup oil
¼ cup vinegar
¼ cup onion, chopped
1 tsp. salt
1 tsp. pepper
2 tsp. Worcestershire sauce
In a large container, combine all ingredients. Cut beef or chicken into large bite size pieces. Marinate meat over night or for a few hours. Skewer meats alternately with desired fruit or vegetables onto skewers. (If using wood, presoak skewers to cut down burning of wood while on the BBQ.)
For many 4th of July BBQ’s this was the traditional menu at Diane's house.
